Dried egg whites are found in trade in two forms:
- Flake egg white
- Powdered egg white
Reconstitution of dried egg white, 180g to 200g dried whites, 1000g water.
Egg white flakes must be allowed to stand in water for approx. 12 hours until it has been completely broken down.
Egg white powder can be used immediately it is mixed in the water. As for fresh egg white.
Snow powder this contains other products as well as hen egg white, such as starch and other binding materials. As for dried egg white.
Snow powder a mixture of icing sugar, anti clogging agent and fat material. Because of its poor solubility. It is used to dust over the top of torten and patisserie which are covered with creme.
